MOSS and Email in a VPC without Exchange

A colleague of mine has detailed an excellent method of setting up email within a single VPC environment without requiring exchange (as we all know exchange takes over the SMTP service, and hence MOSS can't co-exist with exchange - there are email related problems since MOSS likes the local SMTP service itself !).
